Best Ratio for Rosemary Simple Syrup?

Hey everyone,

I’m experimenting with making Rosemary Simple Syrup for cocktails and coffee, but I’m not sure about the best sugar-to-water ratio or how much rosemary to use. Should I go with a 1:1 or 2:1 syrup?

Also, do you simmer the rosemary or just steep it off the heat? I want a strong herbal flavor without it being overpowering or bitter. Any tips on how long to infuse for the best balance?
