Best way to manage video output with an outrageous amount of consoles?

Long story short I have 24 consoles and a pc hooked up through hdmi, including older consoles through various mods or converters. I have them like this so I can run them through a capture card and not have to be constantly switching out cables and to get the best video quality. Currently I have hdmi switches daisy chained together so that I can have enough ports available to connect everything up. I just purchased 2 new consoles and the cabling is out of control. I was wondering if anyone has any suggestions on where to get an hdmi switch with more than 8 ports? Most of what I can find online max out at 8 or are several thousand dollars. It’s possible I’m just not looking in the right places or if I could run it over cat6 through a switch?
