I am so dam confused over this information! You have sausages in a tin? and then you have another set of fake sausages in a packet? Then you talk about cubes of bacon (I am guessing your pigs are tiny) and who doesn't produce fresh sausages year round? Are you living in an igloo as well?
Tinned/canned ham is a thing, but I don't buy it. None of my pictures are of a canned ham.
Both of the pictures are of fresh sausage. 1st pic is ring sausage. 2nd pic is linked sausage. Both are overly processed aka store bought/mass produced.
Mass produced / huge companies produce pigs/meat all year. Usually by using hormones and inhumane farming practices.this is true. We don't have a shortage of meat.
HOWEVER
I buy local farm raised meats (unless I run out then I purchase from the store) I buy quarter, half and whole.
Relating to this post I specifically buy my pigs from FFA children. It is a national group called future Farmers of America. It teaches young children how to become farmers. They have produce farmers and live stock, in my area we have both. They raise live stock everything from chicken Turkey rabbits all the way to sheep and heffiers . They grow their livestock late winter - early fall. ( Christmas time- school time) Then they bring them to show , usually at the county fair. I buy them at the fair sale (auction). And have a local butcher process them where I then pick up packages of meat. I buy chicken Turkey pork and beef usually. I did once buy a peacock. He's living his best life at a petting farm. I also buy eggs but those are year round. Also from farm children at their self made self run roadside stand.
Although you didn't ask. I have rules personally put on by myself.
1. I don't buy babies. Lamb And veal are not in my recipe book.
2. I'm not Laura Ingles , I pay a butcher/processor
3. At anytime if the grower cannot let it go I undo the sale with no hard feelings and let them know when they are ready I'll buy it again. ( Kids are kids and sometimes they just aren't ready)
4. I don't need names I don't really need to be close to it to see if it's weight enough. I like meat but it can't be personal.
